Introduction

Simple comfort food, that I now use as a side dish instead of a main meal. Simple comfort food, that I now use as a side dish instead of a main meal.

Ingredients

    1 box or bag of Pasta (approx 1lb)
    2 Boneless, Skinless Chicken Breasts
    1/2c Smart Balance Buttery Spread
    1c Grated Parmesan Cheese

Directions

Prepare pasta, drain and set aside.

While pasta water boils and pasta cooks, cut chicken into small strips or cubes. "Marinate" in fridge with either fresh, minced garlic and sea salt, or toss with pre-prepared garlic salt.

Once pasta is cooked, dry the pot and put about half of your butter. Heat on high and cook chicken chunks until browned lightly on all sides.

Pour pasta in along with remaining butter and grated cheese.

Stir until butter and cheese melt. Season to taste.

I serve as a side to a main of leafy green vegetables.
