Ingredients

    15 oz can of sliced beets, drained and rinsed
    or 2 cups sliced cooked fresh beets
    2 cups sliced cucumbers
    2 cups sliced onions
    2 cups sliced tomatoes
    1 cup vinegar
    1 cup water
    2 tbs splenda or sweetener

Directions

Slice veggies
add drained and rinsed beets
add vinegar, water and sweetener
mix all together, cover and let sit in fridge an hour or longer to let veggies absorb flavors

In the summer I keep in tightly covered container and just keep adding veggies to it as needed.
