Ingredients

    1C uncooked orzo
    12 oz chicken breast, cut up
    1 T salt-free Greek seasoning
    2T capers
    2T lemon juice
    2T olive oil
    1 tsp minced garlic
    1/2 tsp salt
    1 lg red bell pepper, cut in thin strips
    1/2 C chopped green onions

Directions

In a small bowl, blend seasoning, capers, lemon juice, olive oil, garlic and salt. Set aside.
Slice pepper and chop onion. Set aside.
Cook orzo till tender, as any pasta. Drain and keep warm.
While orzo is cooking, heat a nonstick pan on high. Spray with pan spray, add chicken and cook until done, 5 min or so. Remove from pan.
Reheat pan, spray with pan spray, add pepper slices and chopped onion. Saute a few minutes till tender.
Pour in seasoning mixture, and add chicken. Toss gently to coat all and heat through. Simmer a minute or two, then pour contents of pan into bowl with orzo. Stir together and serve immediately.
