    3 lbs Butternut Squash (small, young ones, if available)
    1 cup water
    2 tbsp butter
    1/4 cup grated parmesan cheese
    salt and pepper to taste


wash squashes.

cut ends off squash (no need to peel unless squashes are overgrown and skin is particularly tough), then cut in half, lengthwise. scoop out seeds and discard. cut each half into four pieces.

arrange butternut squash in rondeau (straight sided pan) or pot with lid. add water.
bring water to boil, then reduce heat to medium and cover.

test the doneness of the squash as you would potatoes, inserting knife or fork into flesh of produce - you're looking for easy insertion and same release.
if water is still in the pan when this status is achieved, increase heat to high and stay close while water evaporates from cooking vessel.

reduce heat to medium and add butter, turning the squash pieces to coat in melting fat.
salt and pepper to taste, keeping in mind that cheese will be added.
sprinkle grated parmesan (freshly grated is best for metling purposes) over top of squash, cover pan, and remove from heat. cheese should melt nicely over the squash.

serve and enjoy!
