    1 hard-boiled egg
    2 oz part-skim ricotta cheese
    1 tbl lite mayonaisse
    1 dash salt (or to taste)
    1 dash ground pepper (or to taste)
    2 tbl chopped celery
    1 tbl chopped onion


peel hard-boiled egg, mash with fork to desired consistency, add ricotta & spices & mayo, mix well, refrigerate for 15 minutes for flavors to blend..good on multi-grain bread or as a salad plate with lettuce, tomatoes & other fresh veggies.
