Ingredients

    Avocados, California (Haas) - 25 cup, pureed
    Spinach - 1/2 cup
    Light Pepper Jack Cheese - .5 oz
    Egg - 1 large
    Tortilla - flour or whole wheat -1 serving (8 inch)
    Light cream cheese - 5 tbsp

Directions

Whisk egg in a small bowl and add a pinch of salt and pepper.

Get your tortilla ready by pureeing the avocado in a small bowl and then spreading the mixture over the tortilla. This is now ready for your scrambled egg.

Heat a small pan and spray cooking spray just to cover the pan.

Sautee the spinach in the pan, cooking it until it's cooked through, but not soft.

Add the egg into the pan and mix into the spinach, cooking it over low heat, slowly scrambling them. When they are almost done, add the cream cheese to add texture and creaminess to the egg. Turn the heat lower and take the pan off the flame, still stirring.

Sprinkle the cheese over the egg. You don't need a lot.
Stir the egg mixture and add some green onions/chives if you wish.

Add the egg mixture to the tortilla, spreading it evenly. Roll the tortilla up and enjoy!

Add a dabble of light sour cream if you wish, or drizzle some hot sauce over your creation. It's also nice with some cilantro garnish. If you're a tomato lover, add some tomatoes on the side, too.
