This is from a fellow sparkspeople, I just modified it and needed to see where I was calorie wise. This is from a fellow sparkspeople, I just modified it and needed to see where I was calorie wise.
Number of Servings: 4


    Eggplant, unpeeled Sliced long ways, 4-8 slices
    Pizza Sauce 14 gram
    Onions, raw, .5 cup, chopped (I like to saute mine first)
    8 oz Chicken Breast, Chopped
    2 oz crumbled Athenos feta cheese, reduced fat, (remove)
    *amaranth 28g = 1 oz, 28 gram(s) (I pop it, add italian spices and bread it before putting in broiler. It is included in the nutritional info)
    Spinach, fresh, 1 cup
    Olive Oil, .5 tbsp (remove)
    Sargento Parmesan, 8 tsp (remove)


slice unpeeled Eggplant lengthwise to make big oval pieces, Lightly brush the slices with olive oil and brown them on your BBQ, indoor grill or pan (approx. 5-8 min.).OR dip them in an egg white wash and bread them with the popped amaranth season. Place the slices in a large flat oven pan and put under broiler for 5 min each side.or until not soggy.

Add a light layer of Pizza Sauce, top with Onions, spinach, chicken and Feta (you can add moz Cheese at this time too)
Cook for 10 minutes. Open the oven door and Broil until cheese is bubbly and golden brown.

Garnish your pizza with Parmesan Cheese and Red Pepper Flakes.
Depending how big the eggplant is and how many slices you get will depend on the servings. I am able to get 4-8 slices with a big egg plant. If I get 8 then I get two slices as a serving. I like thinner, makes it crispy.
