Number of Servings: 8


    Ingredient Group 1:
    - 2 lbs. chicken tenders
    - 1 Tbsp. chili powder
    - 1/4 cup flour
    - 1 cup reduced-fat sour cream
    - 2 large eggs
    - 1 tsp. salt
    - pepper to taste
    - juice from 1/2 a lemon

    Ingredient Group 2:
    - 8 oz. pkg unseasoned panko breadcrumbs
    - 1 tsp. cayenne pepper
    - 1 Tbsp. dried parsley

    Ingredient Group 3:
    - 1/2 cup blue cheese
    - 1/4 cup sour cream
    - juice from 1/2 lemon
    - salt and pepper to taste


1. Assemble foodstuffs from Ingredient Group 3. In mixing bowl, combine blue cheese, sour cream, lemon, and pepper. Mash together, cover, and place in fridge until chicken is done.

2. Assemble Ingredient Group 2. Preheat oven to 425. Line a sheet pan with foil, set aside. In a large dish or pie tin, combine panko, cayenne powder, and parsley. Set aside.

3. Assemble Ingredient Group 1. Place chicken in gallon-sized ziplock bag. Add chili powder and salt. Seal and smoosh chicken around to coat. Add flour, seal bag, and smoosh around again to coat. Set aside. In mixing bowl, whisk eggs. Add sour cream and beat well.

4. Assemble chicken, breadcrumbs, batter, and sheet pan. One piece at a time, take chicken and shake off excess flour. Dip in batter to coat, drop into breadcrumbs to coat. Set on prepared sheet pan. When all the chicken is breaded, bake for 20-25 minutes or until lightly browned. Serve with blue cheese dip. :)
