Introduction

The traditional Spanish tortilla is made with browned potatoes and eggs. This variation of mine uses caramelized onions and fresh spinach for less calories and more nutrition, while providing maximum flavor. Everyone loves this recipe. It's perfect for a light dinner with a salad. Or cut into smaller portions to serve as a tapa, like in Spain.Also perfect for brunch. Ingredients

    8 egg whites
    2 T. olive oil
    1 large yellow onion sliced thin
    2 cups fresh spinach
    1 tsp.salt
    1/2 tsp. pepper

Directions

Heat a 10" non-stick oven proof frying pan on cook-top. Add olive oil.
When oil is hot add onions and cook them until they are caramelized. In another pan put spinach and a few Tbsp. of water, cook until wilted. Add to onions. Beat eggs in separate bowl and add to onions and spinach. Do not stir. Cook over medium low heat until almost cooked through, shaking pan slightly to insure it's not sticking to pan. Place pan under broiler for last 3-5 minutes or until eggs are set. Slide out of pan onto plate. Cut into 6 wedges. Serve at room temperature.
