Ingredients

3 large omega 3 rich eggs.
1/2 cup 1% cottage cheese
1/4 cup feta cheese
2 cups fresh spinach chopped
1/4 cup red pepper chopped
1/4 cup onion chopped
3-4 drops hot pepper sauce
1/2 tsp garlic powder or 1 clove garlic minced
sea salt and pepper to taste
Directions
Line a 12 cup muffin pan with foil baking cups. spray the cups with cooking spray.
Combine eggs, cottage cheese, feta, peppers, onions, spinach,hot pepper sauce, garlic in a bowl. Mix well. Divide evenly in 12 muffin cups. Bake at 350 for 20 min or until a knife inserted in the center comes out clean.
2 muffin quiche per serving.
May be frozen and reheated in the microwave if desired. Take foil outer layer of muffin cup off before microwaving.
Any combination of vegetables may be used.
