    1 cup Mushrooms, fresh cut into pieces or slices
    8 pods Okra, (3" long)
    3 medium Onions cut into strips
    1 cup Bok Choy, raw broken up
    6 Tbsp Rice Vinegar
    1 Tbsp Dry sherry
    1 tsp Gingerroot
    2 Tbsp Red Pepper sauce
    1 tsp white pepper
    1 Tbsp low sodium Soy Sauce
    1 Tbsp Sesame Oil
    6 cups chicken broth - reduced sodium
    9 oz Tofu, light, extra firm cut into strips or cubed


In 4-quart Dutch oven, toss in all ingredients except tofu and bring to a boil. Reduce heat; cover and simmer 5 minutes. Stir in tofu. Cover; simmer 3 to 5 minutes or until thoroughly heated.
Makes 6 - 1 cup servings
