    1 can Old El Paso Green Chili Pepper
    1 can Old El Paso Vegetarian Refried Beans
    1 Can Red Kidney Beans
    2 Lb. Lean Ground Turkey
    1/4 cup Diced Onion
    1 Packet Old El Paso Taco Seasoning
    2 Cans Hunts Diced Tomatoes and Sweet Onion
    4 7-inch Low Carb Whole Wheat torillas
    1 12 cups Cheddar Cheese
    2/3 cup Water


In a non-stick skillet, fry the meat until no longer pink. Add onion, chilis and kidney beans. Cook until the onion is translucent and the beans are warmed through. Add the Taco Seasoning and 2/3 cups of water and stir till all meat and beans are coated. Let simmer a few minutes to allow the taco seasoning to create a bit of a sauce.

Pour both cans of diced tomatoes into a large glass pan. Layer half of the meat mixture on top of the tomatoes. Spread 1/2 of the refried beans on top of 2 of the tortillas and layer them on top of the meat and tomatoes, beans side down (you will have two tortillas, side by side, with refried beans on the bottom of them). Sprinkle 1/2 of the cheese evenly on top of the tortillas. Layer the rest of the meat mixture, then spread the rest of the beans on the remaining two tortillas and lay them on the meat (bean side down) and sprinkle the rest of the cheese on top. Cover the pan with tin foil and bake in a 350* F oven for about 30 minutes or until everything is very bubbly and hot.

Serve on a bed of lettuce and add condiments of your choice. I like a serving of fat free sour cream and some mild salsa on mine.

Options ... if you like your food spicier, substitute Rotel Tomatoes and Green Chilis for one or both cans of diced tomatoes.
