Introduction

Ingredients

    4 large tomatoes chopped
    2 medium zucchini thinly sliced
    1 large onion, thinly sliced
    3 large green peppers, chopped
    2 teaspoons dried basil
    2 teaspoons dried oregano
    salt and pepper to taste
    2 garlic cloves, minced
    1 large eggplant, chopped

Directions

Chop all vegetables, cover and cook in slow cooker for 4 hours on high. Makes at least 6 1 cup servings.
