Ingredients

    3 medium eggs
    1/2 cup Egg Whites or Egg Substitute
    3 cups raw spinach
    1 medium onion
    2 Tblsp olive oil
    2 Tblsp Parmasean cheese
    3 Tblsp feta cheese

Directions

Heat olive oil on medium heat. Dice onions and place into oil, cooking them until soft. Add the spinach and stir until wilted. Remove from heat. In an omlette pan, spray with cooking spray and heat on med/low heat. Scramble the eggs and egg substitute-beat them well. Add the egg mixture to the omlette pan. As omlette cooks, gently lift the edges of the eggs, letting the liquid egg from the top run underneath it. Do this all around the pan until the top of the omlette has no more runniness. Flip the omlette carefully and turn the heat down. Take the spinach and onion mixture and strain it. Then place it on top of the eggs. Top with the 2 cheeses, and fold the omlette in half. Serve with pepper--salt won't likely be needed due to the salty cheeses...
