Number of Servings: 6

Ingredients

    2 pork tenderloins (3/4 lb. each)
    1 tsp. coarsely ground pepper
    2 T. olive oil
    1-1/4 C. orzo pasta
    1/4 tsp. salt
    1-10 oz. pkg. frozen spinach
    1 C. grape tomatoes, halved
    1/4 C. crumbled feta cheese
    6-8 sliced Kalamata olives (opt.)

Directions

Rub pork with pepper; cut into 1-in. cubes. In large nonstick skillet, cook pork in oil over medium heat for 8-10 minutes or until no longer pink. Stir in spinach during last minute of cooking until spinach is wilted. Meanwhile, cook orzo with salt per package instructions (about 8 minutes). Add tomatoes (and olives, if used) to pork mixture and cook 1 minute longer till heated through. Drain orzo; add hot orzo and feta cheese to pork mixture and toss together. Yield: 6 servings.
