    30g flaked almonds
    30g pistachios
    2 Tbl honey
    1 tsp grated lemon zest
    1 Tbl lemon juice
    4 sheets filo pastry
    Olive oil spray
    1 tsp cinnamon
    300g strawberries, hulled & halved


Preheat the oven to 180C. Finly chop the nuts and put them in a small bowl along with the hone, lemon zest and lemon juice. Put a piece of baking paper on a baking tray. Lay one of the fil sheets on top, spray with oil, repeat with remaining sheets. Spray top sheet then dust with cinnamon and sprinkle with nut mixture. Bake for 15 minutes or until golden brown, then liberally cover with icing sugar. Divide strawberries between places and top with pastry.

Can be served with cardomon and rosewater syrup (1/2 cup sugar, 1 tsp lemon juice, 5 cardomom pods bruised, 1/2 tsp rosewater: dissolve sugar in 1 cup water with cardomom and lemon juice. Simmer 5 minutes then stir in rosewater and cool.
