Introduction

A delicious alternative to oatmeal. I like to make this on the weekends and reheat it for a quick weekday breakfast. A delicious alternative to oatmeal. I like to make this on the weekends and reheat it for a quick weekday breakfast.

Ingredients

    1 large apple, cored and chopped
    1 cup brown rice
    1 cup water
    3-inch cinnamon stick
    4 cups 2% milk
    3 tablespoons Splenda
    1/3 cup Craisins
    1 teaspoon vanilla

Directions

Spray a large pot with cooking spray.
Place rice, water, and cinnamon stick in the pot. Bring to a boil, then cover the pan. Simmer for 10-15 minutes, or until water is absorbed.
Pour the milk into the saucepan and cook until milk simmers.
Add Splenda, apple, and Craisins.
Cover and cook for 45 minutes. The porridge will thicken as it cooks.
Stir in the vanilla.
