    1 lb tender beef steak
    2 medium onions, finely sliced
    1 tbsp butter
    4 cups beef broth
    1 cup blackberries (or blueberries or huckleberries), lightly smashed
    1 tbsp honey


Heat a pan, spray with non-stick spray and add steak and brown on both sides over medium-high heat. Remove from the pan and set aside.
Reduce the heat to low and add sliced onions and butter to the pan. Stir well, scraping up the meat juices. Cook over low heat until the onions are soft.
Add beef broth and salt and bring to the boil, stirring well. Mix in the mashed berries and honey. Simmer for 20 minutes.
Meanwhile, cut the steak into thin, bite-size slivers. Tase the soup and add steak to the pan. Cook gently for 30 seconds, stirring, then serve hot.
