Introduction

Ingredients

    1 cup fat free frozen hash browns
    1/4 onion thinly sliced
    1 cup mushrooms
    3 cups spinach
    1 small or 1/2 medium hot pepper (cayenne, serrano or jalapeno. Avoid habenero unless you like your eyelids to sweat)
    1 1/2 Tbsp nutritional yeast
    salt and pepper to taste
    a little water if spinach is dry

Directions

In a small non-stick pan, brown the hash browns in a little oil spray.

In a separate pan, saute the onions in oil spray until translucent. Add sliced pepper and sliced mushrooms and saute until mushrooms are tender.

Sprinkle with nutritional yeast, add spinach and a little water, cover and simmer until spinach is cooked. Stir well to incorporate the nutritional yeast

Add salt and pepper to taste
