    1 large red cabbage (or 1/2 drumhead and 1/2 red cabbage)
    2 large red onions, halved and sliced
    2 lg eating apples, cored and roughly chopped
    1/2 cup(3 fl oz) red wine (or port)
    1/4 cup red wine vinegar
    3/4 cup chicken or vegetable stock
    2 tsp mixed spice
    1 tsp fennel seeds
    1 tsp caraway seeds
    Salt and pepper


Preheat the oven to 160C/325F
Quarter the cabbage,remove core, diecard, and slice rest of cabbage finely.
Layer in a capacious casserole dish, with a well fitting lid, the shredded cabbage with all the remaining ingredients . If the casserole is flameproof, bring up to the boil on top of the hob - not absolutely necessary but it does give the cabbage a beginner's boost, thereby marginally abbreviating a lengthy cooking time.

Transfer the cabbage, covered, to the oven (or just put it straight in from cold) and leave to cook down gently for 1 1/2 - 2 hours.
Stir after about an 3/4 hour, and then again every so often..
The cabbage should cook down to tender and absorb most of the liquid. Do not let it dry out!!
Taste and adjust the seasoning and either serve at once or reheat thoroughly when the next meal comes along

  • what does "mixed spice" consist of????? Or is it the fennel and caraway seed mixed together?? - 6/18/10

    Mixed spice is a mixture of cinnamon, nutmeg, ginger usually - but it can very easily be omitted, or even ut one of the spices used depending on your likes!!
