Number of Servings: 14


    1 cup GV Old Fashioned Oatmeal,
    1 cup Milk, nonfat,
    1 cup Gold Medal Better for Bread Flour,
    37 grams Brown Sugar,
    113 gram(s) GV All Natural Apple Sauce No Sugar Added,
    2 large egg white, fresh,
    0.5 tsp Baking Powder,
    0.5 tsp Baking Soda,
    0.5 tsp NoSalt, Sodium Free Salt Alternative,
    1 tsp Cinnamon, ground,
    1 tsp Granulated Sugar,
    14 pieces of Walnuts,


Soak the oats in milk for about one hour.
Meanwhile, Preheat the oven to 400 degrees.
Measure and whisk the dry ingredients together in a separate bowl.
Line Muffin pan with silicone Muffin liners (reusable, easy to clean)
Combine the oat mixture with the applesauce and egg whites, mix until combined.
Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired (Raisins not included in Calorie Count). Do not over-mix the batter or Muffins will be tough. Spoon muffin mixture into muffin pan. Top with Walnut Pieces.
Bake for 20-25 minutes or until done.
Remove from pan, cool and enjoy.
These can be frozen and reheated in the Microwave for a quick snack.
Makes 14 Muffins.
