Easy Banana Bread made with Jiffy Mix Easy Banana Bread made with Jiffy Mix

    1/4 cup butter
    3/4 cup sugar
    2 eggs
    1 teaspoon almond extract
    3 medium blackened bananas, mashed
    2 cups Jiffy Mix
    Butter Pam


Preheat oven to 350 degrees. Cream butter and sugar. Add eggs, bananas and extract. Mix well. Add flour and mix until well blended. Spray loaf pan with butter Pam. Fill with banana bread mix and bake for 25 minutes. Makes eight mini loaves.

If using standard muffin pan, two muffins equal one mini loaf.
