    Bay Leaf, 1 tbsp, crumbled
    Chili powder, 1 tsp
    Thyme, ground, 1 tsp
    Chicken Breast, no skin, 9 ounces
    Chicken Broth, 2 cup (8 fl oz)
    Ham, extra lean, (5% fat), 2 cup, diced
    Broccoli, fresh, 3 cup, chopped or diced
    Garlic, 2 cloves
    Onions, raw, 1 medium (2-1/2" dia)
    Green Peppers (bell peppers), 1 cup, chopped
    Stewed Tomatoes, 400 grams
    Shrimp, cooked, 12 large
    Brown Rice, medium grain, 2 cup


Brown onion, garlic, and green pepper in olive oil. Add tomatoes, chicken broth, and spices and bring to a boil. Add Chicken and simmer. Add Ham and shrimp, cook until rice tender and fluffy. Remove bay leaves before serving. Serves 7, serving size a generous cup.

    This was a very good dinner dish. I didnt add shrimp in though I will next time. Very good !!!! - 1/1/12
