    6 large tomatoes
    2 large onions
    6 T Parmesan - 1 for each bowl


Cut tomatoes and onions into large pieces and put into a roasting pan. Place in a roasting pan. Cook at a low 250, overnight - or 8-10 hours. The onions should be brown and very soft when done. Put it in a blender and puree. This will keep well, I like to make it fast in the morning after roasting all night. Add water when preparing to serve - add enough to make it the desired consistency. (I like this soup very thick) When serving, add a Tablespoon of Parmesan Cheese and mix in. It's good without cheese as well.
