    3 cups great northern beans (canned or cooked)
    3 cups canned whole tomatoes
    4 cups frozen chopped spinach
    1 tbsp italian seasoning
    1/4 cup balsamic vinegar
    2 tbsp garlic
    8 ounces turkey breast, diced


Add beans, frozen spinach, and 1/2 cup of water to nonstick soup pan. Use a stick blender (or blender/food processor) on the tomatoes and add to pan. Add italian seasoning, garlic, balsamic vinegar and the diced turkey breast. Simmer covered over low heat for minimum 30 minutes, stirring occasionally. Will be more of a stew consistency versus a soup. Makes 7 (1 cup) servings
