    1/2 cup flour
    1 tsp salt
    1 tsp pepper (more or less to taste)
    2 tsp thyme
    2 Tbs oil
    2 1/2 lbs very lean stewing beef
    3 cups (1 large can) tomatoes (diced is what I use)
    1/4 cup blackstrap molasses
    2 Tbs cider or white vinegar
    4 cloves of garlic minced
    2 medium sliced onions
    2 bay leaves
    1/2 cup raisins
    4 cups cut carrots


Mix flour and spices. Dredge meat in flour. Brown in oil in batches. When meat is browned, add the remaining flour and onions, garlic, tomatoes, molasses, vinegar and bay leaves. Simmer on the stove for a couple of hours. An hour before serving add the raisins and carrots. Cook until carrots are tender. Serve over rice or mashed potatoes
