    Ingredients– serves 4
    400 g Extra Lean Ground Beef
    1 cup chopped onion
    1 cup low sodium canned corn (or frozen thawed)
    1 cup diced tomatoes
    1 cup tomato salsa
    4 tbsp ketchup
    1 tsp chilli powder
    2 blue menu jalapeno or high protein tortillas
    4 tbsp chopped green onion
    2 cup baby spinach leaves (or chopped lettuce)
    4 tbsp low fat plain yogurt


1. In large skillet, cook ground beef and onion over medium heat until meat is browned. Stir in corn, tomatoes, salsa, ketchup, and seasonings. Simmer over low heat about 10 minutes, stirring frequently.
2. Warm tortillas in oven or microwave. Cut tortillas in half – each half is one ‘fajita’ shell.
3. Spoon ¼ meat mixture onto each tortilla. Add toppings. Serve immediately.
