    4 oz cooked chicken (dark meat in this case), shredded
    1 oz spicy pickles
    3 tbsp light olive oil mayo


Chop chicken in food processor. Add mayo and pickles and pulse until mixed and smooth. Serve over lettuce or on whole wheat toast.
Makes 2 servings, about 3 oz each.
