Ingredients

    12 oz pork tenderloin or boneless pork
    1 small can (14 fl oz) Dole pineapple chunks
    1/2 cup orange juice (Sensations)
    1/4 cup VH Lite Soya Sauce
    1 tsp Bovril Chicken bouillon concentrate
    1 clove garlic, minced
    2 tbsp cold water
    4 tsp cornstarch
    1 medium green or red pepper cut in 1" squares
    1 tbsp cooking oil


Directions

Thinly slice pork into bite size strips, set aside.
Drain pineapple, reserve juice , set aside.
In small bowl combine reserved pineapple juice, orange juice, soy sauce, bouillon, garlic and pepper, set aside
In small bowl mix cold water and cornstarch, set aside.

In wok or large skillet stir-fry pork and red or green pepper in hot oil 3 -4 minutes or till pork is just browned. Remove from wok. pour juice mixture in wok, add pineapple chunks cover and cook 2 minutes. Remove pineapple from wok with slotted spoon place on platter, cover and keep warm. return pork and peppers to hot liquid in wok. Stir cornstarch mixture add to wok. Cook and stir until thick and bubbly. (If sauce is too thick add a few tbsp of water) Spoon pork mixture over pineapple chunks.

Makes 4 serving (1/2 cup pork mixture and 3.5oz of pineapple)
