This is a lower fat but still rich sopu. This is a lower fat but still rich sopu.
Number of Servings: 7


    2 c reduced sodium fat free chicken broth
    2 boxes of frozen chopped broccoli
    1/4 chopped white onion
    2 cups whole milk
    1 T. butter
    1 T all purpose flour
    1/2 t. salt
    1/8 t. white pepper
    1/8 t. ground nutmeg
    ground parmesan for garnish


put chopped onion, broccoli (break up with fork) and chicken broth in a large saucepan over medium heat. Stir often til boiling. Turn down to a simmer for 10 minutes.

Set off heat for 5 minutes.

Puree hot mix in blender or food processor - hold the lid on firmly to prevent burns - steam will build up. I suggest using the low pulse til nearly done then a slow blend.

Meanwhile, in saucepan over VERY low heat - make a white sauce from the butter and flour. When smooth add seasonings, then very slowly add milk. Stir well. Add puree mix. Stir well and heat til serving temperature.

Garnish with a small amount of grated parmesan cheese.
