Introduction

This recipe is fairly easy to make and uses fresh ingredients as well. The Laughing Cow cheese wedges add some great flavor. This recipe is fairly easy to make and uses fresh ingredients as well. The Laughing Cow cheese wedges add some great flavor.
Number of Servings: 3

Ingredients

    -14 oz or so of boneless skinless chicken breast(after I cooked it, it weighed about 12.75 so I guessed at the frozen weight)
    -3 cups of chopped fresh spinach
    -1 fresh garlic clove, minced
    -3 wedges of Laughing Cow cheese, Light Mozzarella Sun-Dried Tomato & Basil flavor
    -20 cherry tomatoes, chopped into bite sized pieces

Directions

--Cook your chicken in the skillet until done, then chop into bite size pieces.

--Put all ingredients in the skillet and cook over low heat until spinach is slightly wilted, cheese is mixed in and all is nice and warm.

--Makes 3 servings of 1 C each (big). Goes great with rice or oven roasted potatoes (neither in the nutrition)
