    2 cups blueberries
    2 tbs FRESH sage leaves, minced
    1/2 cup sugar
    Zest of One lemon
    1 1/2 cup flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 large eg or 1/4 cup egg substitute
    1/2 cup plain nonfat yogurt or nonfat sour cream
    1/4 milk
    2 tbs canola oil
    1 tbs lemon juice


Pre heat oven to 375

Mix blueberries, freshly minced sage leaves, and the zest of one lemon in a bowl. Allow to sit for 30 minutes.
Mix dry ingredients together.
Mix liquid ingredients together.

Mix liquid ingredients to blueberry mixture after 30 minutes, than add this to the dry ingredients. Mix just until flour has been absorbed. Fill muffin tins with 1.5 Tbs of mix. (Best to use paper muffin liners since these will stick). Makes 18 muffins.
