Introduction

Hearty, healthy chicken chili. Great served over brown rice pasta for 'Chili Mac' type of meal. Serving size is about a half cup, this serves 6-8.

Ingredients

    Water, Kidney Beans, Mushrooms, petite diced tomatoes, onions, chicken breast, olive oil, garlic, chili powder, cayenne pepper, Mrs Dash.

Directions

Makes 6 to 8 1/2 cup servings. More or less depending on water.

Brown chicken breast with the olive oil, add onions, cook til onions are tender. Add in the mushrooms, canned tomatoes and kidney beans. Cook on low for a few minutes then add water and spices. The Mrs Dash is personal preference. I often use the Onion and Herb along with the Extra Spicy for a good mix of flavours.

Cover and simmer for at least an hour, longer if you prefer. Adjust spices and seasonings for personal preference. Serve alone as a soup/stew, or serve over brown rice pasta, Quinoa, or just brown rice.
