Hearty soup with sweet potatoes and corn. Hearty soup with sweet potatoes and corn.
Number of Servings: 10


    1 pound dry lima beans
    1-2 sweet potatoes or yams, diced into small cubes
    1 cup onion, chopped coursely
    2 cloves garlic, minced
    1 tsp dill weed
    1 tsp salt
    1 can cream of corn
    1 cup of milk


Soak lima beans overnight or bring to a boil in a quart of water, turn off heat and let sit for one hour. Drain beans. Add beans, sweet potatoes, onion, garlic, dill weed, and salt to crockpot. Cook on low for the day. Before serving add can of creamed corn and cup of milk. Makes 10 - one cup servings.
