    Sift flour and salt (1/4 tsp) into a bowl. Slowly add water, whisking constantly to form a batter. Beat with a wire whisk until smooth. Cover and let batter stand at room temp for 30 minutes. Heat 1 Tbsp olive oil in a 10" non-stick skillet over medium heat. Stir batter and pour half (about 3/4 cup) into skillet. Immediately swirl pan to evenly coat bottom of pan with batter. Cook until browned and top is set. About 2-3 minutes. Carefully loosen with a spatula and slide onto baking sheet or pizza pan.
