Ingredients

    Ingredients:

    * Olive Oil, 2 tbsp
    * Onions, raw, 1 large, chopped
    * Garlic, 4 cloves, minced
    * Rosemary, 1 sprig
    * *Crushed Red Pepper, to taste
    * Escarole, 1 head chopped (about 2.5 cups)
    * Pacific Natural Foods Organic Low Sodium Vegetable Broth, 5 cups
    * Beans, white, 2 15-oz cans, drained and rinsed
    * Red Ripe Tomatoes, 1 cup, chopped or sliced

Directions

1) heat oil over medium, then add onion. cook 10 min, stirring occassionally, until soft.

2) add garlic, rosemary and red pepper and cook for 3 min; add escarole and cook until wilted.

3) add the broth, beans and tomatoes and continue to cook until all the flavors come together!

enjoy with some nutritional yeast, or parmesean cheese sprinkled on top.
