Ingredients

    1 lb. boneless, skinless chicken breast, cut into cubes
    1 Tbsp olive oil
    1 large onion, sliced
    1 large green pepper, sliced
    1 clove garlic, minced
    1 12-oz jar salsa
    1 tsp chili powder
    3 Tbsp reduced fat sour cream
    1/3 cup cheddar cheese, shredded

Directions

Heat the oil in a large skillet or chicken fryer. Brown the chicken cubes; add onions, green pepper, and garlic. When slightly soft, stir in salsa and chili powder. Cover and cook 15-20 minutes. Before serving, stir in sour cream. Serve over rice and top with shredded cheese.
