Introduction

Ingredients

    4 cups water
    1 cup Farro - pearled (whole grain)
    2 tsp salt
    1 pound tomatoes, chopped or grape tomatoes halved
    1/2 sweet onion (Walla Walla)
    1/4 cup fresh chives
    2 garlic cloves minced
    1.5 tbsp balsamic vinegar
    1/8 cup olive oil
    Fresh ground pepper to taste

Directions

Makes 4 1-cup servings

- Cook Farro in water according to instructions.
- While Farro is cooking chop tomatoes, celery can chives.
- Drain Farro well and mix in vegetables.
- Whisk together olive oil, balsamic vinegar and garlic.
- Mix into Farro and vegetables.

Serve warm or refrigerate and serve cold.
