Introduction

Ingredients

4 T olive oil
3 garlic cloves, minced
1 large onion, diced
2 lb. chicken breast, cut into bite-sized pieces
4 C chicken broth
2 C water
2 4-oz. cans of diced green chiles
3 large potatoes, diced
2 medium-sized sweet potatoes, diced
1 can sweet corn, drained and rinsed
1 t black pepper
1 t crushed, dried oregano
1/2 t ground cumin
1/2 t chili powder
2-4 T flour (wheat or white)
Directions
1. In skillet, heat oil, then brown onions, garlic and chicken until no longer pink.
2. Add all ingredients except flour to slow cooker.
3. Cover. Cook on high for 4 hours or low for 6 hours, until potatoes are soft.
4. Make a slurry of 2-4 T of flour and 1/3 C water. Mix well, then stir into hot stew until thickened to your desired consistency. Let cook another 15 minutes, then cool a bit and serve.
