    1/2 TBLE butter
    1/2 Tble canola oil
    2 leeks (about 3 cups white part and lower leaves, sliced thin)
    Salt and pepper to taste
    3 med potatoes (about 3.5 cups), cubed. I do not peel.
    3 cups fat free chicken or veg broth
    1 cup 1% milk
    parsley to garnish


1. Sautee leeks in oil and butter till soft in large pot
2. Add potatoes, salt and pepper.
3. Add broth cover and cook on low heat about 45 min or till potatoes tender
4. Add milk.
5. In food processer or with stick blender, puree till desired texture. heat through, garnish and serve.

Makes about 9-1 cup servings.
