Ingredients

    Red Ripe Tomatoes, 6 large whole (3" dia) (remove)
    White Rice, short grain, 1 cup (remove)
    Onions, raw, 1 cup, chopped (remove)
    Garlic, 3 cloves (remove)
    Banana Peppers, 1 cup (remove)
    Olive Oil, 3 tbsp (remove)
    Salt, 1 tbsp (remove)
    Pepper, black, 1 tsp (remove)
    Parsley, 1 cup (remove)
    Water, tap, 6 cup (8 fl oz) (remove)
    Tomato Sauce, 3 cup (remove)

Directions

1) Blanche tomatoes in boiling water. peel the skins and then dice the tomatoes. You can use a masher.
2) In soup pot, add olive oil, onions, peppers and garlic and saute together until onions have sweated.
3) Add mashed tomatoes, tomatoe sauce, water and seasonings. Bring to a boil.
4) Mix in rice and stir well. Let simmer for 30 mins. on medium heat.
