Introduction

From swamnsonvitamins.com, Swanson Health Product (healthy recipes). Their recipe included 1/2 stick butter! can't imagine that is terribly healthy. Haven't made this yet.
well, the butter was to precook the onion; I used 1 T or so of EVOO (not in calorie count). This recipe is good enuf, not great. Maybe somebody has ideas for improvement. Makes a lot! a bit thick. not a fave, but ok. JC

    Beans, black, 2 cup
    *Tomatoes, red, ripe, canned, whole, no salt added, 1 can
    *Onion - Raw, chopped, 1.5 cup
    *Garlic (1 clove), 4 serving
    *Cumin seed, 2 tbsp
    Salt, 1 tsp
    Pepper, black, .5 tsp
    *Trader Joe's Organic Low Sodium Vegetable Broth, 4 cup
    *Pumpkin Puree, Libby, 1.75 cup
    Red Wine, 4 fl oz
    *farmland fully cooked diced ham, 8 oz
    balsamic vinegar, 4 tablespoon
    Pumpkin Seeds, .5 cup

Directions

sprinkle pumpkin seeds on when serve.
