Ingredients

    1.5 cups lentils
    1 onion
    carrots (I used baby carrots. Add as much as you like)
    1 tsp olive oil
    Hunt's fire roasted canned tomatoes
    vegetable bullion cubes
    bay leaf

Directions

saute onion and carrots in oil. Add tomatoes, lentils, then water and bullion cubes (along with the bay leaf). Allow to cook for 45 minutes at a simmer. Enjoy!
