    4 cups zucchini, thickly sliced
    3 shallots, finely chopped
    4 cups chicken (or vegetable broth)
    1 1/2 tsps curry powder
    1/2 stick unsalted butter
    1 tsp cayenne pepper


Makes 8 1-cup servings

Melt butter in large skillet over medium heat and cook zucchini and shallots for about 3 minutes, to soften and coat in butter. Add veggies, broth and spices to crock pot, cover and cook on low for 5-6 hours. You can substitute veggie broth for the chicken broth if you are vegetarian. I also like things a bit spicier, so i doubled the cayenne.

Using a handheld immersion blender or food processor, puree the soup. Ladle and serve!

  • I made this last night and wouldn't make it again. My husband didn't care for it. Maybe my zucchinis were flavorless and my curry powder much too hot. - 3/22/11
