Ingredients

    1 1/2 cups ricotta cheese
    4 large eggs
    salt & pepper to taste
    1 tbsp olive oil (for the pan, you can use spray if you prefer)

Directions

Place ricotta in a medium-sized mixing bowl. Add the eggs one at a time, stirring well after each one. Add salt and pepper (as much or as little as you prefer) and then form into patties and fry as you would pancakes!

Makes approx. 8 servings.
