    1 1/2 C diced tomato
    1/3 C diced red onion
    1/2 diced acovado
    1 T chopped fresh cilantro
    1 1/2 T Sriracha
    2 t fresh lemon juice
    1/2 t fish sauce
    1 t sugar
    3/4 t garlic powder
    1/2 t ground corainder
    1/4 t salt
    1/8 t freshly gound black pepper
    4 (4oz) boneless center-cut loin pork chop
    cooking spray


Prepare grill to medium-high heat.

Combine first 7 ingredients.

Combine sugar and next 4 ingredients (through pepper); sprinkle evenly over both sides of pork. Place pork on grill rack coated with cooking spray; grill 4 minutes on each side or until done. Serve with salsa.

serves 4 (serving size: 1 chop and about 1/3 C salsa)
