    One slice whole wheat bread, one large egg, chopped spinach (about 5 leaves worth), an eigth of a cup of 2% shredded cheddar cheese, and butter spray for the pan.


Chop fresh spinach, or thaw frozen. Heat pan and spray butter substitute evenly. Tear hole in the middle of bread or use cookie cutter. Place bread in pan. Crack egg into the middle of the toast. Break yolk with fork. Add spinach and gently stir into the egg. Use a flipper and turn the bread to cook the other side. Remove from pan when egg is done. Add shredded cheddar cheese as a topping. Serves one.
