    1 Red Pepper
    1 Orange Pepper
    1 Yellow Pepper
    2 Red Onions
    2 Summer Squash
    2 Zucchini
    3-4 Garlic Cloves
    .5 tsp salt
    .25 tsp pepper


Cut veggies in large chunks. Mix all ingredients in large bowl. Spread on cookie sheets or roasting pans. Roast in top 1/3 and bottom 1/3 of oven at 450 for 30 minutes.
