Number of Servings: 8


    2 - 6oz pouches boneless skinless salmon
    1/4 cup grated onion
    1/2 cup low fat mayonaisse
    2 T lemon juice
    1 tsp garlic powder
    dash cayenne pepper
    1/2 cup chopped red pepper
    2 large eggs beaten
    1 cup seasoned breadcrumbs
    1/2 cup oil
    dash of salt


Combine first 7 ingredients in large bowl. Add salmon and part of the breadcrumbs. form mixture into 8 balls. roll balls in remaining breadcrumbs. Heat half the oil in a skillet. Flatten into patties and cook 4 once the oil is hot. Fry 3 minutes and turn. Remove, add remaining oil and cook remaining patties. Serve with lemon slices.
