    1 small spaghetti squash
    2 tomatoes, diced
    1 medium onion, diced
    3 cloves garlic, minced
    1 bunch basil
    1 Tbsp plus 1 tsp olive oil, divided
    3 Tbsp pine nuts
    1 3.5 oz package reduced fat feta cheese


Slice spaghetti squash in half lengthwise, scoop out seeds and guts and bake rind side up at 350 for about 35 minutes until a knife can pierce rind easily. (to make it easier to cut in half pierce with a knife a few times and microwave on half power for about 3 minutes.)
Saute onion in 1 Tbsp olive oil until fragrant, add garlic and cook until onion is just translucent. Add tomatoes until heated through.
Lightly toast pine nuts in 1 tsp olive oil.
Use a fork to separate strands and scoop spaghetti squash into a bowl. Toss with sauteed vegetables, pine nuts and feta. Serve immediately or refrigerate for a tasty "pasta salad"

Makes 3 2-cup servings (Servings might be more or less depending on the size of your squash)
